White Bean Dip

Ingredients

  • 500 g White beans
  • 3 tbsp Olives
  • 2 tbsp lemon juice
  • 1 tbsp Tahini
  • 1 clove Garlic
  • 3 tbsp Water
  • 1 pinch Salt
  • 1 pinch Pepper

Preparation

  1. Place the white beans in a sieve, rinse thoroughly with cold water, and drain briefly.
  2. Roughly chop the garlic clove and add it to a tall container along with the beans, lemon juice, and tahini.
  3. Add the sea salt and pepper and briefly blend everything on medium speed with an immersion blender.
  4. Slowly pour in the olive oil and cold water while blending continuously until a completely smooth mixture forms.
  5. Taste the spread, season with a little more salt or lemon juice if needed, and smooth into a shallow bowl.
  6. Warm sourdough bread, toasted baguette slices, or crunchy vegetable sticks made from carrots and cucumbers pair wonderfully with it.

How it tastes

The white beans form a wonderfully smooth base. Thanks to their soft texture, the dish turns out velvety entirely without dairy products, while fresh lemon juice provides a pleasant acidity and the finest olive oil binds all the flavors into a silky emulsion. Garlic adds depth.
