Banana Bread with Walnuts
This fine pastry combines ripe fruit with aromatic walnuts into a wonderfully warm breakfast for 4 people that brings you peace.

- 2 pieces Banana
- 60 g Walnut
- 130 g Spelt Flour
- 30 g Olive oil
- 30 g Wheat Bran
- 4 pieces Date
- 1 piece Egg
- 1 tsp baking soda
- 1 tsp Cinnamon
- 1 pinch Salt
Preparation
- Preheat your oven to 175 degrees top and bottom heat and lightly grease a small 20-centimeter loaf pan.
- Thoroughly mash the bananas with a fork on a plate into a fine puree.
- Roughly chop the walnuts with a large knife and toast them briefly in a pan.
- Mix the olive oil with the chopped dates and the egg in a bowl. Add the mashed banana as well as the spelt flour, the wheat bran, the baking powder, and the spices.
- Fold in the chopped walnuts and briefly stir the batter with a spoon just until no pockets of flour are visible.
- Pour the batter into the prepared loaf pan and smooth the surface.
- Bake on the middle rack for exactly 50 minutes, until the crust shines golden brown, the batter is completely set, and a wooden skewer comes out dry.
- After baking, let the loaf cool in the pan for 10 minutes before turning it out and slicing it.
